Rou song (肉鬆) (pinyin with tones: ròu sōng), pork floss, is a traditional and popular side dish in Taiwan. The classic way to enjoy rou song is having it as a side dish with congee, which you can find in restaurants serving qing zhou xiao cai (清粥小菜, congee served with side dishes). Another popular way to eat rou song is adding it on or into some foods such as dan bing (蛋餅, egg wrap), pi dan dou fu (皮蛋豆腐, chilled tofu with century egg), fan tuan (飯糰, sticky rice ball), rou song mian bao (肉鬆麵包, pork floss bread), egg rolls, and many kinds of pastries.
How To Make Rou Song (肉鬆)?
It takes a lot of time and efforts to make fluffy and crispy rou song. First, overcook the pork until it becomes tender and is smashed easily. To eliminate the gamey taste, you can add some ginger or green onion to the pork. Second, pull the meat into small strips, and stir fry it with oil, soy sauce, and seasoning you like. Last, use gentle heat to cook or oven to bake until pork floss is fully dried. You can also add sesame and nori mix them with rou song.
