Zong He Geng (綜合羹/综合羹) Hodgepodge Thick Soup
Zong he geng (綜合羹/综合羹) (pinyin with tones: zòng hé gēng), hodgepodge thick soup, is a combination of you yu geng (魷魚羹, squid thick soup), hua zhi geng (花枝羹, cuttlefish thick soup), and yu su geng (魚酥羹, fried fish cake soup). The ingredients may be different depending on what kinds of geng (羹) each restaurant has served. Zong he geng, like other geng, is usually served with rice, noodles, or thin rice noodles; or you can eat it as a soup and order other staple food like lu rou fan (滷肉飯, braised pork on rice).
Family Of Geng (羹)
There are several popular geng (羹) dishes in Taiwan: chi rou geng (赤肉羹, starch-coated pork thick soup), you yu geng (魷魚羹, squid thick soup), hua zhi geng (花枝羹, cuttlefish thick soup), xia ren geng (蝦仁羹, shrimp thick soup), yu su geng (魚酥羹, fried fish cake thick soup), and tu tuo yu geng (土魠魚羹). If everything looks tasty and you do not know which one to have, try zong he geng, and you can taste at least three kinds of meat or seafood.
The Meaning of Geng (羹)
Geng, also known as geng tang (羹湯) (pinyin with tones: gēng tāng), is a kind of thick soup which is broth thickened by potato starch or corn starch. In Taiwanese geng tang, there usually are some meat coated with starch such as chi rou geng (赤肉羹, starch-coated pork) and tu tuo yu geng (土魠魚羹, fried Spanish mackerel thick soup), or the meat made with fish paste such as hua zhi geng (花枝羹, cuttlefish and fish paste dumpling) and you yu geng (魷魚羹, squid and fish paste dumpling). These long-irregular-shaped kinds of meat in thick soup are also called “OO geng.”
