Mian Xian (麵線/面线) Vermicelli
Mian xian (麵線/面线) (pinyin with tones: miàn xiàn) is a kind of noodles, but is thinner and saltier than any other noodles. Mian xian seems to go with certain foods and is usually served with them. Common cuisines served with mian xian are like da chang o a mian xian (大腸蚵仔麵線/大肠蚵仔面线, pork large intestine and oyster vermicelli), ma you ji (麻油雞/麻油鸡, sesame oil chicken soup), ma you song ban zhu (麻油松阪豬/麻油松阪猪, sesame oil pork neck soup), and lu zhu jiao (滷豬腳/卤猪脚, braised pork feet). Mian xian can also be made like gan mian (乾麵/干面, dry noodles) which only has some sauce and seasoning on it like ma you mian xian (麻油麵線/麻油面线, vermicelli with sesame oil).
